I am a level 120 Life character, and i only have 663 (73%) which is a pretty low chance for me. My damage from clothing and Jewels, and pets is only 128. I know there are some better gear out there, and i'd like to know what your ideas are.

That looks like good gear to me. Just remember life is not based on focusing on just attacking and more defence. I think the gear you have is actually pretty neat and I am glad you gave us all of the gear yo have.
What kind of block do you have is the main question
I also like to use the Witchhunters Crossbow from the witchhunters bundle which gives around 130 critical and I think 12% damage (I am not online to check at the moment) and you are also allowed to affix a square jewel into the wand as well. If you want to focus on attacking and a decent block rate, I would say you need to stick with the eye of the soothsayer. I think the gear you have now is actually one of the best life sets that I have seen and I am going to look into what I need out of that set.
You should also try to get the moolinda wu gear from the professors hoard pack :) They give good critical rating.

Hat: Nadezha's Cowl of Recovery has 168 critical, I believe this is the crafted one from sardonyx
Athame: Spirit of Darkmoor's Thorn has 16% damage and 2 circle sockets which can be used for critical jewels, this is from yvegany the first boss in the graveyard
Amulet: Spirit of Darkmoor's Jewel has 35 cricial, it is from Shane von Shane in the 2nd darkmoor dungeon (not the graveyard)
Ring: Mithraya Vivid Seal, has 81 critical and 1 circle socket for a critical jewel, this is from the key boss in Mirage, the mimic one
You need 795 critical to get 100% at level 120, of course if you had the Tormentor's Skullsplitter, critical wand from the harrowing nightmare pack it would be much easier to achieve, but packs are such a gamble and this one is only around at Halloween and special sales!
