Why is it that when I use Giant (+125 dmg) on Scarecrow, it only adds 83 damage? Is this to do with it being a steal-health spell?

yes, you are getting the difference back as health, so it's 2/3 of bonus to the attack, 1/3 to the heal

Health drains get only half damage increase from the sun spells

Don't worry, Death isn't the only one suffering from that. Fire has immolate which I've tested yesterday it only get half to the attack from epic (+300 originally) It instead gave +150 to the damage to me and the damage to the enemy. So don't worry. Your school is not the only one.
