I see a lot of people say switch to crafted gear in KH. I don't understand why though. You lose universal resistance and a couple other stats just for some critical and block. It always seemed like a downgrade to me. Can someone explain to me why the crafted gear would be better than just keeping the Waterworks gear until darkmoor?
I certainly don't see the point. I think it's partly the misconception that crit/block are the most important aspects of your loadout.
at least in PvE, crit block was a highly coveted thing since most monsters always blocked your crit hit, unless that stat was out of this world. Now that crit hit works better, it's the more coveted stat over block

there are certain stats that matter more to certain styles of players. Generally speaking, crit block is now worthless UNLESS you have a crazy high level of it. Since most players dont want to sacrifice the other stats to get that, they focus on critical hit now.
Crafted gear has better stats than Bazaar gear. Bazaar gear stinks after L56. You have a better chance of doing better if you mix and match crafted with great dropped gear (athame, necklace, ring). Athames are good to craft, rings are not good to craft.
