I know there are a lot of pets that are more equine based. For example the white or necromantic elk (Hallowed nightmare pack mount) could be be life and death school pets. Or perhaps one like the Headless Hoseman - as a mount as if you were on the horse with him. I just feel like equine pets would really add to the variety of pets. Or.missed Equine mount oppertunities..
Or ones much like the Fangle and Blue Ox- myth school petspets! I have many examples. But that is the greater sum of the idea.
