How many houses are you allowed to have? If I keep buying new cards with elixirs can I add as many as I want?

You can have one of each type of house. At the time of this post there are over 30 houses available (http://www.wizard101central.com/wiki/Category:Castle_Images) - you can have own of each of these per character.
