Why is it, one battle two creatures . Win that battle then fight another two at the same place and win again only to have one of the two register, or none of the register. And you only need 4 of them and you end up have to battle 12 of them

Guessing you mean for fight and collect quests. Note you only have a chance to get one from each mob enemy. you could get all 4 or 3 out of 4 in a single fight if it's full

If it's a "Defeat&Collect" quest, it's perfectly normal. If it's just "Defeat", it's a bug.
